There are two micro-climates on Gran Canaria Island: the dry, warm south and the wet, cool north. But the weather contrast doesn’t stand in the way of its popularity among tourists. Likewise with the Canaria cocktail. This is a good mix of contrasting flavors: bitter, sour grapefruit and lime juice with sweet orange syrup.

Step 1: You will need (for one portion):
— grapefruit juice — 60 ml / 2 oz
— orange syrup — 15 ml / 0.5 oz
— half of a lime
— ice cubes
— crushed ice

Necessary utensils:
— martini glass
— ice scoop
— ice tongs
— ice bucket
— measuring cup
— jigger
— squeezer
— shaker

Step 2: Fill the martini glass with crushed ice to cool it.

Step 3: Fill the shaker with ice cubes.

Step 4: Measure 60 ml / 2 oz of grapefruit juice with the measuring cup and pour into the shaker.

Step 5: Put half of a lime in the squeezer and press to release juice into the shaker.

Step 6: Measure 15 ml / 0.5 oz of orange syrup with the jigger and pour into the shaker.

Step 7: Lock the shaker and shake it well, holding it with both hands by the bottom and by the cap. You should hold very tight or the shaker may open!

Step 8: Shake until the shaker has beads of sweat on the outside.

Step 9: Pour the mix from the shaker into the glass.

Step 10: Garnish with a lime slice.
The Canaria is complete!
